My brother and I moved to NYC in the 80’s
To tell you the truth I intended to move there. And he intended to stay only a couple months.
Guess what happened. Yep. He still lives there, and I lasted a couple months!
So what oh what does this have to do with sesame peanut butter noodles? Well, while we were both in NYC in the fabulous 80’s one of our favorite things to do was to take the subway to Chinatown, get an assortment of exotic (to us) dishes and eat them on the roof of our building overlooking the city. One of our favorite dishes was sesame noodles — so simple yet so flavorful! For two kids from Mississippi, eating cold spicy noodles on the top of a building in New York City was kind of mind blowing.
Of course I still love sesame noodles, mainly because they’re delicious and easy to make and keep so well in the fridge. But also because they remind me of my brother and that amazing time and place.
Sesame Peanut Butter Noodles Ingredients
To make Sesame Peanut Butter Noodles you’ll need:
Linguine Noodles. The wider surface of linguine allows the noodle to soak up more of the sauce.
Peanut Butter. This adds so much flavor and body to the sauce! Best to use natural peanut butter with no added sugar, but if you only have pb with sugar cut the brown sugar from 3 tablespoons to 2 tablespoons.
Soy Sauce. Adds saltiness and flavor. Substitute tamari if that’s what you have.
Rice Vinegar. A slightly sweet vinegar traditionally used in many Asian dishes. Apple cider vinegar is a good substitute.
Brown Sugar. Rounds out the flavors. If you’re using sweetened peanut butter you’ll probably want to use less brown sugar. If you’re trying to cut back on your sugar intake, you might even try leaving it out altogether.
Vegetable Oil. Helps bind the sauce together. Any mild flavored oil is fine though peanut oil would go along with the peanut butter theme nicely!
Sesame Seed. Help thicken the sauce and amplify the sesame flavor.
Chili Garlic Sauce. Oh my goodness. This is worth searching out (or you can make your own). Adds just the right amount of heat and garlic intensity.
Toasted Sesame Oil. When you’re making sesame noodles you want them to taste like sesame, right? Here’s the oil for the job. Nutty aroma and flavor.
Ground Ginger. You may use a 1″ piece of fresh ginger, peeled instead.
Garlic. Just one large or 2 small cloves. No fresh garlic? Substitute 1 teaspoon garlic granules.
You’ll also need:
Stainless steel stockpot I like to use a larger stockpot to boil noodles as they need lots of room to move around. One of my pet peeves is stuck-together noodles, so I tend to stir them periodically while they’re cooking.
Ninja Fit Personal Blender Here’s the key to a quick and easy and so creamy sauce. Just put all the ingredients in the blender cup and…blend! This is my favorite blender and one of my top 5 favorite kitchen tools.
Colander A nice big stainless steel colander. The holes aren’t so big that your pasta escapes into the sink.
Pasta server You gotta have one of these to toss the noodles around in the sauce. If you don’t eat a lot of pasta and feel that a pasta server would be in the way, use a pair of kitchen tongs.
how to make Sesame Peanut Butter Noodles
- Cook linguine according to package directions.
- While linguine is boiling make the sauce by combining all ingredients in the Ninja Fit Blender. Run blender until sauce is completely smooth. Alternately, whisk ingredients together.
- When noodles are done, drain and pour into serving bowl. Pour the sauce over the hot noodles and mix together with tongs or a pasta server. It will look like there’s too much sauce, but never fear — the noodles will soak up all its deliciousness!
- Set aside for about 10 minutes to give the noodles a chance to absorb the sauce. Then serve topped with green onions and sesame seed.

Sesame peanut butter noodles will keep in an airtight container in the fridge for up to 4 days.

Sauce Ingredients
- ⅔ cup water
- ⅓ cup natural peanut butter smooth or crunchy
- ¼ cup soy sauce substitute tamari
- ¼ cup rice vinegar
- 3 Tbsp vegetable oil peanut or canola
- 1 Tbsp toasted sesame oil
- 3 Tbsp brown sugar
- 2 Tbsp sesame seed toasted for extra flavor
- 1 Tbsp garlic chili sauce
- 1 tsp ground ginger
- 1 clove garlic, peeled 1 large or 2 small
Toppings
- sliced green onions
- toasted sesame seed
Instructions
- Cook linguine according to package directions.
